While I kind of enjoyed finding out exactly why Pommes Frites is so much better than regular American style fries, I also think that if you have enough time on your hands to take calipers to french fry crust you could probably be doing something a bit more constructive.

Funny you’d say that about a food science article, Jay, but not about the countless movie or tv articles that we post. I think food science is a far better use of your time than watching TV. And I love TV!

You see, you’re right, it’s just that the movie and tv articles are straight up about being lazy and doing nothing. This guy actually took the initiative to do a scientific study that is actually kind of comprehensive, yet in the end it served no pupose really. He already knew the best way to make fries. I don’t really have a problem with it, I just thought the image of calipers on a french fry was kind of ridiculous.
Also Luke, I am in no way trying to denigrate cooking if that’s how you took it. I’m all about any effort that will end up putting more deliciousness inside of me.
I think more people should do incredibly detailed and accurate science just for the hell of it, honestly. It thrills me.
