interesting! maybe I missed it since i sorta skimmed, but does this apply to chicken too? I thought resting chicken had more to do with it continuing to cook than staying moist, so maybe not.
Yep, definitely applies to chicken. The more heat the protein has, the more active it is and when you cut it, it’ll leak.
