Also, I totally beat this guy to the punch. I have a jar of baconnaise in my fridge and I was able to hold an emulsion with much less vegetable oil. I WIN!
i hardly ever touch mayonnaise aside from the occasional deviled egg or if i make my own light-on-the-mayo egg salad to pair with english bacon. otherwise, i hate the stuff. it might be the consistency. that said, i would at least try these.
Mayonnaise is far and away my favorite condiment. I am a fan of all mayo-based “salads” — egg salad, tuna salad, potato salad, and even potato salad’s much-maligned younger brother, macaroni salad.
