Meatloaf
Scout has never had meatloaf. I’ve never made it. Never really have been a fan of it. Anyone have any good recipes for it?

Ingredients
- 1 pound of meatloaf mix (1 part beef, 1 part pork, 1 part veal
- 1 large egg (or 2 small)
- 1 cup of breadcrumbs
- half a decently-sized onion, minced
- parsley, chopped
- salt and pepper to taste
Instructions
- Preheat oven to 400.
- Mix everything in a bowl and form it into a log on a pan. If you you raise the loaf off the pan a bit with a backing rack and some tinfoil or something, all the better. but no worries if you can’t.
- Bake for 30 min or so, or until it looks done.
Suggestions
- You can make a nice glaze with some ketchup, hot sauce, brown sugar, oil or butter, and other various spices. Mix ‘em together and smear ’em on the meatloaf. It’ll be awesome.
- Don’t let the juice and fat and awesomeness that collects in the pan go to waste. After you take the meatloaf out, deglaze the pan with some beef stock or broth and boil it to reduce by half. Add some rosemary, bayleaf, salt and/or whole peppercorns for flavor. Add some flower or roux to thicken it up.
This is pretty much like the one I use. But my special twist is the berry glaze I use to coat it (no need for ketchup) — lemon juice, can of cranberry sauce
1 1/2 pounds ground beef (leaner is better)
• 1 cup 2% milk
• 1 tablespoon Worcestershire sauce
• 1/4 teaspoon dried sage
• 1/2 teaspoon salt
• 1/2 teaspoon dry mustard
• 1/4 teaspoon fresh ground pepper
• 2 cloves garlic, minced
• 1 small onion, finely chopped
• 1/2 cup dry bread crumbs
• 1/2 cup ketchup or barbecue sauce
