the sea salt thing makes sense. i bake mine for slightly less time than is usually stated and they stay chewy. i make awesome cookies.

The whole leaving the dough resting for a day or so part is especially intriguing. It makes perfect sense and I can’t wait to make some (and them smush some vanilla ice cream between two of them and then roll it in peanut butter chips)

i’ll have to try leaving it for that 36 hour period. maybe bake half baked and half “aged”.

so the peanut butter chips were a good idea? i told bill about it. he is jealous.

i almost always let the dough sit for a day – i make it, and then eat half of it raw, and then get really sick and put the rest of it in the fridge and go to bed. then i make five giant cookies out of what’s left. it is brilliant.
