of all the restaurants i worked at, Johnny Rockets on south street was the cleanest. everything was scrubbed every night to pristine conditions. it maybe have changed since i left years ago, but i was very impressed by it all.
the kitchen for The Fountain is obviously pretty damn clean, too. busy as hell, as it’s also the kicten for the Swann Lounge and the rest of the Four Seasons Hotel food services, but they keep it up very well for such a small area they have to work with.
